Three Recipes for Tailgating This Football Season

I don't know about you, but fall is my favorite time of year. Cool temperatures, the leaves changing color, and of course - football season! With tailgating right around the corner, we scoured the internet for the best, most delicious recipes for tailgating this fall. Each is easy to make, easy to get to the game, and will make your fellow fans rave!
Here are three excellent recipes for tailgating at football games:
1. Cowboy Nachos
These nachos are loaded with marinated brisket, pinto beans, pico de gallo, cheese, and jalapeños. They're the perfect way to feed hungry football fans (and cowboys).
Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can pinto beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (10-ounce) can enchilada sauce
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bag (16 ounces) tortilla chips
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- 1/4 cup sour cream
- 1/4 cup guacamole
- 1/4 cup salsa
- 1/4 cup chopped jalapeños
Instructions:
- In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Stir in the onion and garlic and cook until softened.
- Stir in the pinto beans, diced tomatoes, enchilada sauce, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened slightly.
- Spread the tortilla chips on a large platter. Top with the beef mixture, cheese, green onions, sour cream, guacamole, salsa, and jalapeños. Serve immediately.
2. Buffalo Chicken Dip
This dip is creamy, cheesy, and full of Buffalo flavor. It's sure to be a hit at your next tailgate party.
Ingredients:
- 1 (12-ounce) package cooked chicken, shredded
- 1 (18-ounce) container of cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup blue cheese dressing
- 1/4 cup hot sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions:
- In a large bowl, combine the chicken, cream cheese, cheddar cheese, blue cheese dressing, hot sauce, garlic powder, and onion powder.
- Mix until well combined.
- Transfer the dip to a serving bowl and serve with your favorite dippers.
3. Spicy Sweet Potato Chips
These chips are crispy, sweet, and slightly spicy. They're the perfect snack for tailgating or game day.
Ingredients:
- 2 large sweet potatoes, scrubbed and sliced into thin rounds
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat the oven to 400 degrees F (200 degrees C).
- In a large bowl, combine the sweet potato slices, olive oil, chili powder, salt, and pepper.
- Toss to coat.
- Spread the sweet potato slices on a baking sheet in a single layer.
- Bake for 20-25 minutes, or until the chips are crispy and golden brown.
- Serve immediately.
